小松菜

小松菜はカルシウム含有量は野菜トップクラス。
アクが少ないので、茹でずに使えます。

小松菜
種まきの時期
(春まき)３月中旬～４月中旬
(秋まき)９月中旬～１０月中旬
栽培のポイント
  1. 生育期間が短いので追肥はほとんど必要ありません。
  2. 発芽率が良いので、厚まきする必要はありません。
  3. 間引きしながら収穫します。
  4. 家庭菜園向きなのは、「晩性小松菜」「後関晩性小松菜」「卯月小松菜」です。
  5. プランターやビニール袋でも栽培できます。
土作り
  1. あらかじめ苦土石灰を施しておいた畑に、幅４０センチで印をつけ、化成肥料を１平方メートルあたり150ccほどを均等にまきます。
  2. 化成肥料をまいた後に、堆肥を１平方メートルあたり１Lほどまき、よく耕して土とませ合わせます。
  3. 表面を平らにし、高さ１０センチくらいの畝をつくります。
種まき
  1. 小松菜の種で、黒いものは充実しているもの、黄色は未熟なものです。選別する必要はありません。
  2. 厚まきする必要はありません。２～３センチ間隔でていねいにすき間を埋めるようにまいていきます。
  3. まき終わったら、フルイに土をとり、１～１．５センチくらいに薄く土をかぶせます。
  4. 軽く手で押さえていきます。範囲が広い場合、板などを使うと効率的です。
  5. 種が流れないように、静かにゆっくりと水をやります。
  6. 鳥よけ・虫除けに寒冷紗をかけておくとよいでしょう。
  7. ３～４日で発芽します。
収穫
３週間くらいで１０センチほどに成長するので、間引きをかねてどんどん収穫しましょう。
この時、抜いてから根を切った方が、土に根が残らないので良いでしょう。

２５～３０センチくらいの時に収穫しましょう。
栄養素
小松菜にはカルシウム・ビタミンA・鉄・カリウム・食物繊維などを多く含み、なかでもカルシウムはほうれん草の５倍、野菜の中ではトップクラスを誇ります。

カルシウムが不足しがちな熟年の方、または妊婦さんや成長期のお子さんに積極的に食べてほしい野菜です。
お店で買う場合のポイント
葉の緑が鮮やかではりがあり、葉肉が厚いものがいいとされています。
茎は太く、はりとみずみずしさがあり、大ぶりのものがおいしいそうです。
根がしっかりと長いものが生育のよい証拠。
旬は１２月～１月。
